Palm Beach Hibiscus is comprised of two historic houses that were both built in 1917 and moved to their current location in 1996. The Main House, where our gourmet breakfast is served, is comprised of four beautifully appointed rooms including an ADA accessible room. The Courtyard House is home to our four remaining rooms, which include our pet friendly rooms and our luxurious Hibiscus Suite. Between the two houses is our tropical courtyard, large enough to host corporate gatherings, weddings, birthdays, or holiday parties and quite enough to relax and unwind at our backyard bar.
Both houses are registered in the National Register of Historic Places.
Randy Wills
Randy has more than 30 years experience in the laboratory and pathology industry: his past responsibilities have included senior positions in general management and laboratory operations. Randy become a partner in Hibiscus House Downtown in 2003 and then Owner /Partner in 2007. Currently, Randy owns a consulting firm serving pathologists, dermatologists, gastroenterologists and urologists while overseeing the able Palm Beach Hibiscus Managers listed below.
Patrick O’Kelley
Pat has vast experience in manufacturing and retail before joining the PBH in 2008 where he assumed the Evening Manager’s Position. In 2010, Pat was promoted to General Manager. Michael “Cheffee” Ober
Is a Master Chef, trained in Europe. His culinary skills have developed over 20 years working in 5 star hotels & elite restaurants in Europe, earning Michelin Stars. Michael expanded his horizons a few years ago when he was invited to work in the mega yachting industry and has since sailed around the world cooking for the rich and famous aboard some of the worlds largest private yachts. He earned his Master Chef certification in 2003 in Hamburg, Germany. Michael’s cooking style reflects a traditional French foundation with a focus on fresh produce that embraces the global influences of his travels. He is happy to cater to the dietary needs of all guests that will please the palates of even the most meticulous diners.
Melanie Robertson-Ober
Has 10 years experience in the hospitality industry and is a Certified Sommelier. Mel has been sailing the world as a Chief Stewardess on mega yachts since 2004, serving some of the most prominent identities & celebrities in Palm Beach. Melanie completes the dining experience created by Michael with her great food/wine pairing and professional Service Skills. With a combined 10 years in Palm Beach at The Breakers, Maralago, Ritz Carlton & the yachting industry & her friendly Aussie personality, Mel ensures that your event runs smoothly and you and your guests will thoroughly enjoy the dining experience!
